HP Agrees To $4 Million Settlement Over Claims of ‘Falsely Advertising’ PCs, Keyboards

HP has agreed to a $4 million settlement over allegations of deceptive pricing practices on its website, including falsely inflating original prices for computers and accessories to create the illusion of steep discounts. Ars Technica reports: Earlier this month, Judge P. Casey Pitts for the US District Court of the San Jose Division of the Northern District of California granted preliminary approval [PDF] of a settlement agreement regarding a class-action complaint first filed against HP on October 13, 2021. The complaint accused HP’s website of showing “misleading” original pricing for various computers, mice, and keyboards that was higher than how the products were recently and typically priced.

Per the settlement agreement [PDF], HP will contribute $4 million to a “non-reversionary common fund, which shall be used to pay the (i) Settlement Class members’ claims; (ii) court-approved Notice and Settlement Administration Costs; (iii) court-approved Settlement Class Representatives’ Service Award; and (iv) court-approved Settlement Class Counsel Attorneys’ Fees and Costs Award. All residual funds will be distributed pro rata to Settlement Class members who submitted valid claims and cashed checks.”

The two plaintiffs who filed the initial complaint may also file a motion to receive a settlement class representative service award for up to $5,000 each, which would come out of the $4 million pool. People who purchased a discounted HP desktop, laptop, mouse, or keyboard that was on sale for “more than 75 percent of the time the products were offered for sale” from June 5, 2021, to October 28, 2024, are eligible for compensation. The full list of eligible products is available here [PDF] and includes HP Spectre, Chromebook Envy, and Pavilion laptops, HP Envy and Omen desktops, and some mechanical keyboards and wireless mice. Depending on the product, class members can receive $10 to $100 per eligible product purchased.

At a moment when the administration is systematically waging war on diversity initiatives of every kind, it has simultaneously discovered that it is really concerned about both “viewpoint diversity” and “antisemitism” on college campuses—and it is using the two issues as a club to beat on the US university system until it either dies or conforms to MAGA ideology.

Reaching this conclusion does not require reading any tea leaves or consulting any oracles; one need only listen to people like Vice President JD Vance, who in 2021 gave a speech called “The Universities are the Enemy” to signal that, like every authoritarian revolutionary, he intended to go after the educated.

Resist PS VR2 Update Adds 120Hz Refresh Rate On PS5 Pro

Resist just received its first update since being released on PlayStation VR2 last week.

New to Binary Mill’s open world city swinger is that 120Hz is the new default mode for PS5 Pro, offering users a more comfortable view of the hectic first-person action. Elsewhere in the Resist update, social screen tearing has been fixed, a rare issue where players were dropping through the world should no longer occur, and the game should no longer hang on a black screen for those attempting to change language.

Resist was first released on Oculus Quest in 2021 and PC VR a year later and has been favorably compared to the Spider-Man games that have long been native to Sony machines. Thus it is that the enhanced PS VR2 edition of Resist has found something of a natural home, and while it’s unlikely that features such as eye tracking will make it across to other platforms, PC players have been asking whether the higher refresh rate might.

No word from developer Binary Mill on that as yet, but there was a brief update on the state of Into Black, Binary Mill’s next Quest game that is coming to PS VR2: “It’s looking real good, and it’s not too far away now.”

Star Wars: Beyond Victory – A Mixed Reality Playset First Details & Gameplay Revealed

ILM just revealed the first details of Star Wars: Beyond Victory – A Mixed Reality Playset, including footage of gameplay.

The studio behind the Vader Immortal trilogy and Tales from the Galaxy’s Edge announced the upcoming Quest 3 and Quest 3S exclusive title last month. That initial announcement came with no gameplay footage or screenshots, and minimal details beyond that it will “put you inside the world of podracing like never before” and let you meet “up-and-comer” Volo Bolus, who joins forces with legendary podracer pilot Sebulba, featured in Star Wars: Episode I.

Now, ILM Immersive has revealed further details, and shown off the first gameplay.

The studio says the game is set around the time of Solo: A Star Wars Story, and has three distinct modes:

  • Adventure: “Using a combination of virtual and mixed reality, the story follows Volo – an aspiring podracer whose life gets flipped upside down under the mentorship of the infamous Sebulba.”
  • Arcade: “Experience the thrill of podracing in mixed reality on a virtual holotable that brings players right into the heart of the action like never before.”
  • Playset: “Transform the physical world around you and create your very own incredible Star Wars moments in mixed reality with a collection of unlockable virtual action figures and vehicles.”

This confirms that despite the game’s title, it features both VR and mixed reality gameplay, with some elements taking place in your physical room and other elements taking you to an entirely different virtual world.

“We’re calling this a Playset because it isn’t just a game; it’s an entirely new way to experience the Star Wars galaxy and the worlds we create at ILM. This new mixed reality experience blends the physical and digital worlds in a way that’s unlike anything we’ve done before and we’re so excited to share a special first look with our incredible Star Wars community.”

There’s still no announced release date or price for Star Wars: Beyond Victory – A Mixed Reality Playset, but you can wishlist it now on the Meta Horizon Store for Quest 3 and Quest 3S.

Microsoft Researchers Develop Hyper-Efficient AI Model That Can Run On CPUs

Microsoft has introduced BitNet b1.58 2B4T, the largest-scale 1-bit AI model to date with 2 billion parameters and the ability to run efficiently on CPUs. It’s openly available under an MIT license. TechCrunch reports: The Microsoft researchers say that BitNet b1.58 2B4T is the first bitnet with 2 billion parameters, “parameters” being largely synonymous with “weights.” Trained on a dataset of 4 trillion tokens — equivalent to about 33 million books, by one estimate — BitNet b1.58 2B4T outperforms traditional models of similar sizes, the researchers claim.

BitNet b1.58 2B4T doesn’t sweep the floor with rival 2 billion-parameter models, to be clear, but it seemingly holds its own. According to the researchers’ testing, the model surpasses Meta’s Llama 3.2 1B, Google’s Gemma 3 1B, and Alibaba’s Qwen 2.5 1.5B on benchmarks including GSM8K (a collection of grade-school-level math problems) and PIQA (which tests physical commonsense reasoning skills). Perhaps more impressively, BitNet b1.58 2B4T is speedier than other models of its size — in some cases, twice the speed — while using a fraction of the memory.

There is a catch, however. Achieving that performance requires using Microsoft’s custom framework, bitnet.cpp, which only works with certain hardware at the moment. Absent from the list of supported chips are GPUs, which dominate the AI infrastructure landscape.

New Trailer Offers First Look at ‘Star Wars: Beyond Victory’ Mixed Reality Game Heading to Quest 3

ILM and Lucasfilm today revealed gameplay of their upcoming Quest 3 game, Star Wars: Beyond Victory – A Mixed Reality Playset, which offers up both virtual and mixed reality gameplay.

In partnership with Meta, the studios served up a first hands-on with the game to attendees at ‘Star Wars Celebration 2025’, taking place April 18-20 in Tokyo, Japan. Along with it comes a good slate of gameplay revealed its first teaser.

Still in development, the studios say Star Wars: Beyond Victory takes place around the time of Solo: A Star Wars Story (2018), further revealing the game will feature three distinct modes when it launches on Quest 3 and 3S.

This includes a VR/MR combination story mode following podracer ‘Volo’, an arcade mode that brings mini-podracing to a mixed reality holotable, and a ‘playset’ that lets you decorate physical environment in mixed reality with a collection of unlockable virtual action figures and vehicles.

“We’re calling this a Playset because it isn’t just a game; it’s an entirely new way to experience the Star Wars galaxy and the worlds we create at ILM,” said the game’s Executive Producer Alyssa Finley. “This new mixed reality experience blends the physical and digital worlds in a way that’s unlike anything we’ve done before and we’re so excited to share a special first look with our incredible Star Wars community.”

If you’re heading to the event at the Makuhari Messe in Tokyo starting this Friday, you can get a chance to go hands-on with Star Wars: Beyond Victory at the ILM and Meta Quest booth, located in Hall 4, Booth #20-5. Demo stations also include the studio’s previous XR titles Vader Immortal and Star Wars: Tales from the Galaxy’s Edge.

There’s no release date yet, although like all things VR created by ILM for the Star Wars universe, we’re expecting a slow drip of info leading up to launch, so stay tuned.

The Consumer Financial Protection Bureau has cut 90 percent of its employees

The Consumer Financial Protection Bureau has been reduced to a skeleton crew. The department, which was created to oversee banks and financial institutions, has cut about 1,500 jobs, leaving about 200 employees and reducing the agency by about 90 percent.

In addition to cutting most of the staff, Chief Legal Officer Mark Paoletta sent a memo detailing the changed priorities for the CFPB. The bureau has been ordered to deprioritize subjects including consumer data, digital payments, medical debt and student loans. Mortgages will now be the leading topic for remaining employees.

SInce it was created in 2010, this department has pursued actions against financial and tech institutions accused of deceptive or abusive practices, with cases involving firms such as PayPal and Block, which created Cash App. It was also slated to provide oversight of the providers of digital wallets and payment apps.

However, since the start of 2025, the CFPB has abandoned multiple cases it had launched under President Joe Biden’s administration. The Office of Management and Budget’s Acting Director Russell Vought had signaled that the bureau’s days may be numbered when he ordered all of its “supervision and examination activity” to stop in February.

Company apologizes after AI support agent invents policy that causes user uproar

On Monday, a developer using the popular AI-powered code editor Cursor noticed something strange: Switching between machines instantly logged them out, breaking a common workflow for programmers who use multiple devices. When the user contacted Cursor support, an agent named “Sam” told them it was expected behavior under a new policy. But no such policy existed, and Sam was a bot. The AI model made the policy up, sparking a wave of complaints and cancellation threats documented on Hacker News and Reddit.

This marks the latest instance of AI confabulations (also called “hallucinations”) causing potential business damage. Confabulations are a type of “creative gap-filling” response where AI models invent plausible-sounding but false information. Instead of admitting uncertainty, AI models often prioritize creating plausible, confident responses, even when that means manufacturing information from scratch.

For companies deploying these systems in customer-facing roles without human oversight, the consequences can be immediate and costly: frustrated customers, damaged trust, and, in Cursor’s case, potentially canceled subscriptions.

US Halts $5 Billion New York Offshore Wind Project Mid-Build

An anonymous reader quotes a report from Electrek: In its most aggressive attack against offshore wind yet, the Trump administration halted the $5 billion Empire Wind 1, already under construction off New York’s coast. Norwegian developer Equinor announced yesterday that it received notice from the Bureau of Ocean Energy Management (BOEM) ordering Empire Wind 1 to halt all activities on the outer continental shelf until BOEM has completed its review. Interior Secretary Doug Burgum posted this tweet yesterday: “.@Interior, in consultation with @HowardLutnick, is directing @BOEM to immediately halt all construction activities on the Empire Wind Project until further review of information that suggests the Biden administration rushed through its approval without sufficient analysis.”

Burgum gave no indication of what insufficiencies there were in the approval process for the fully permitted offshore wind project, despite Trump’s recent declaration of a national energy emergency that speeds up permitting processes. The commercial lease for the 810-megawatt (MW) Empire Wind 1’s federal offshore wind area was signed in March 2017 during the first Trump administration. It was approved by the Biden administration in November 2023 and began construction in 2024. The project is being developed under contract with the New York State Energy Research and Development Authority (NYSERDA). Empire Wind 1, which was due to come online in 2027, has the potential to power 500,000 New York homes. Equinor says it’s considering appealing the order.
New York Governor Kathy Hochul issued a statement: “Every single day, I’m working to make energy more affordable, reliable and abundant in New York and the federal government should be supporting those efforts rather than undermining them. Empire Wind 1 is already employing hundreds of New Yorkers, including 1,000 good-paying union jobs as part of a growing sector that has already spurred significant economic development and private investment throughout the state and beyond. As Governor, I will not allow this federal overreach to stand. I will fight this every step of the way to protect union jobs, affordable energy and New York’s economic future.”

Trump admin accused of censoring NIH’s top expert on ultra-processed foods

Kevin Hall, a prominent nutrition expert who led influential studies on ultra-processed foods, has resigned from his long-held position at the National Institutes of Health, alleging censorship of his research by top aides of health secretary Robert F. Kennedy Jr.

In a post on LinkedIn, Hall claimed that he “experienced censorship in the reporting of our research because of agency concerns that it did not appear to fully support preconceived narratives of my agency’s leadership about ultra-processed food addiction.”

In comments to CBS News, Hall said the censorship was over a study he and his colleagues recently published in the journal Cell Metabolism, which showed that ultra-processed foods did not produce the same large dopamine responses in the brain that are seen with use of addictive drugs. The finding suggests that the mechanism leading people to overconsume ultra-processed foods may be more complex than the studied mechanisms in addiction. This appears to slightly conflict with the beliefs of Kennedy Jr., who has claimed that food companies use additives to make ultra-processed foods addictive.

Windows doesn’t come with a weather application the way macOS and mobile operating systems do. Sure, the widget area shows the weather, but it also summons news headlines from the very bowels of internet hell and requires that you open a web browser page full of ads to get more details.

If you want a clean, ad-free, and beautiful way to check the weather on Windows I recommend Lively Weather. This is a free and open source native-to-Windows application (by developer Dani John) with complete weather forecasts. It also features beautifully rendered background animations that reflect the current weather conditions.

You can search for any city on Earth to see the weather: Tthe main summary shows up at the top of the screen, and below that sits a seven-day overview alongside a timeline of conditions. There are also boxes for the UV index, sunrise and sunset, humidity, wind, air quality, pressure, visibility, cloud coverage, and total precipitation. Click any day in the seven-day overview and all of these boxes will populate with forecasted conditions. You can also click any box to see more details.

This is, for me, more than enough information about the weather to make choices about my wardrobe and transportation. The only obvious thing missing is radar, which is admittedly a feature some people rely on.

You can choose between imperial and metric in the settings. You can also choose a weather provider: Open-Meteo, OpenWeatherMap, and Qweather (China) are all supported.

Finally, you can choose the quality of the visuals. It’s recommended that you stick with lower if you don’t have a dedicated GPU, which is an absurd sentence to type about a weather application. When you see the backgrounds, though, it makes sense. These are dynamic animations for conditions ranging from sun to rain to snow to lightning, all rendered behind the transparent boxes that offer the actual weather information.

It’s pretty, is what I’m saying, and there are even ambient sounds reflecting the weather condition (though I might suggest opening your window instead).

At monopoly trial, Zuckerberg redefined social media as texting with friends

The Meta monopoly trial has raised a question that Meta hopes the Federal Trade Commission (FTC) can’t effectively answer: How important is it to use social media to connect with friends and family today?

Connecting with friends was, of course, Facebook’s primary use case as it became the rare social network to hit 1 billion users—not by being acquired by a Big Tech company but based on the strength of its clean interface and the network effects that kept users locked in simply because all the important people in their life chose to be there.

According to the FTC, Meta took advantage of Facebook’s early popularity, and it has since bought out rivals and otherwise cornered the market on personal social networks. Only Snapchat and MeWe (a privacy-focused Facebook alternative) are competitors to Meta platforms, the FTC argues, and social networks like TikTok or YouTube aren’t interchangeable, because those aren’t destinations focused on connecting friends and family.

The Pacific Rim prequel series has reportedly found a home at Amazon

A live-action Pacific Rim TV series is in-development at Amazon, according to Variety. News of the project was first shared in 2024, when Variety reported that Arrival screenwriter Eric Heisserer was attached to develop and write the show.

The new series will apparently be a prequel to Guillermo Del Toro’s original Pacific Rim, a movie about Kaiju-fighting giant mechs and the humans that pilot them. Legendary, which produced Pacific Rim, is also backing the series alongside Amazon MGM. The studio appears to be using the same strategy with Pacific Rim that worked with its Godzilla-and-King-Kong-starring “MonsterVerse” franchise. Monarch: Legacy of Monsters streamed on Apple TV+ in 2023, and acted as both a prequel and sequel to the “MonsterVerse” films.

Heisserer has plenty of experience adapting existing material. His Arrival script converted an experimental second-person short story into a (relatively) thoughtful blockbuster, and his work on Netflix’s Shadow and Bone found a clever way to interweave the first book in Leigh Bardugo’s series with characters from a later duology. Pacific Rim seems a lot more straightforward in comparison.

There’s yet to be an official announcement from Amazon, or any dates for when we can expect the series to be available, but there has been quite a bit of new Pacific Rim material since the first film came out in 2013. The live-action sequel Pacific Rim Uprising was released in 2018 and Netflix put out its anime sequel, Pacific Rim: The Black, in 2021.

Don’t Fall for This New Gmail Phishing Scheme

If you receive an email from Google that appears to be a legitimate security alert, do not proceed. Scammers are taking advantage of vulnerabilities in Google’s authentication protocols to send phishing messages that appear convincing enough to steal unsuspecting users’ account credentials. Here’s how to protect yourself.

How this new Google phishing scam works

As Android Authority reports, a developer named Nick Johnson was recently targeted by a phishing email with the subject line “Security alert.” The message was sent from no-reply[at]accounts.google.com and signed by accounts.google.com, making it seem like a legitimate email directly from Google. However, the message led to a fake Google support page hosted at sites.google.com, which directed visitors to “upload additional documents” or “view case.” This ultimately led to a fake sign-in page that asked for account credentials, where scammers would then collect the target’s Google login credentials.

There are a couple vulnerabilities that make this scam possible, according to Johnson. Google allows users to host sites on a google.com subdomain via Google Sites, which makes the website look legitimate. The attackers registered a domain and linked it with a Google Account, then created a Google OAuth app with the phishing email as the app name. Once OAuth had access to the Google Account, it was signed by Google and forwarded to victims. Note that while the email was signed by accounts.google.com, it was mailed by an email originating from privateemail.com.

This isn’t the first phishing scheme to come from a seemingly legitimate email address, making it trickier for users to spot as a fake. Earlier this year, scammers exploited PayPal settings to send fraudulent purchase notifications from service[at]paypal.com.

How to identify and avoid phishing email scams

Phishing emails can be more difficult to catch when they originate from a real or recognizable email address—at least on the surface—as fake addresses with misspellings are the first giveaway of a scam. Generally speaking, you should think twice before engaging with any message that has a tone of urgency or evokes an emotional response even if it looks real.

If you get an email like this from a company you know and whose services you use and the message appears legit, don’t click any links or download any attachments. Go directly to the company’s website by typing in the URL, and check official social media accounts or customer service channels for any alerts related to the message you received—especially if the email has to do with account security or recovery or your personal information.

REK Wants To Let VR Headset Wearers Pilot Real Fighting Robots

According to its founder, REK will be a VR robot fighting game where the top players are flown out to pilot humanoid robots in fights at physical events.

REK comes from XR entrepreneur Cix Liv, who previously cofounded the VR livestreaming tool LIV and the VR fitness tracker YUR. Cix had previously envisioned REK as a mixed reality fighting game in 2022, but canceled that idea in 2023 citing low audience interest as well as the technical and practical issues inherent in using headsets outdoors.

Cix says the virtual robots in the REK VR game, which will “likely” be free to play, will have the same movement mechanics as the real robots, such that players can directly transfer their skills to the real fights.

The top players of the VR game will be flown out to a physical location to pilot robots at the physical fights, using a tethered PC VR headset connected to a PC on the same local network as the robots, to minimize latency.

A new VR startup called Vi wants to make a fitness-focused glove, and eventually a fitness-focused headset too.

Last year, Cix said he was making a fitness-focused smart glove, and eventually a fitness-focused headset, under the brand Vi, but this is no longer happening. Cix tells UploadVR that he couldn’t raise enough money, though still hopes to make his own headset “at some point” to control the REK robots.

Cix is also an outspoken critic of Meta, ostensibly driven by the company not supporting background services on Quest, a capability he needed to bring his YUR fitness tracker to the platform. Cix has also repeatedly claimed that Meta stole his YUR idea with the introduction of Oculus Move, the fitness tracking feature which Meta ironically discontinued last month.

Cix’s criticism of Meta has verged into the realm of misinformation, though. In November he publicly claimed that Meta was set to conduct major layoffs in the VR section of its Reality Labs division in Q1 2025, and that Meta was outsourcing Quest headset design to China, with the hardware team “gone”. Q1 has now passed, and these claimed layoffs did not happen, while Meta’s CTO publicly and directly denied the claims of outsourcing headset design.

Google Is Gifting Gemini Advanced To US College Students

Google is offering all U.S. college students a free year of its Gemini Advanced AI tools through its Google One AI Premium plan, as part of a push to expand Gemini’s user base and compete with ChatGPT. It includes access to the company’s Pro models, Veo 2 video generation, NotebookLM, Gemini Live and 2TB of Drive storage. Ars Technica reports: Google has a new landing page for the deal, allowing eligible students to sign up for their free Google One AI Premium plan. The offer is valid from now until June 30. Anyone who takes Google up on it will enjoy the free plan through spring 2026. The company hasn’t specified an end date, but we would wager it will be June of next year. Google’s intention is to give students an entire school year of Gemini Advanced from now through finals next year. At the end of the term, you can bet Google will try to convert students to paying subscribers.

As for who qualifies as a “student” in this promotion, Google isn’t bothering with a particularly narrow definition. As long as you have a valid .edu email address, you can sign up for the offer. That’s something that plenty of people who are not actively taking classes still have. You probably won’t even be taking undue advantage of Google if you pretend to be a student — the company really, really wants people to use Gemini, and it’s willing to lose money in the short term to make that happen.

Here are the best ways to pack your freezer, the best things to freeze, and how to do it.

Organized freezers fit more and stay cold

Before we dive into specific foods, it’s important to set a standard for freezer organization. Keeping a tidy freezer (and fridge for that matter) will keep you from having a headache finding lost foods, allow you to fit more in the space, and ensure you’re eating older foods first. Freeze sauces, broths, and other liquids flat in freezer safe zip-top bags, and don’t forget to label them. (You might swear to yourself in the moment that there’s no way you’ll forget when you put that chili in the freezer, but then an unknown number of months passes and suddenly you’re not so sure whether that chili is from June or September.) If you don’t like the idea of freezing in plastic freezer bags (keep in mind that many can be washed and reused up to 10 times) then buy a set of freezer-safe storage containers that can be stacked. The goal is to fit as much as possible in your freezer while still having access to all of the items. You don’t want things getting lost in the back. As an added benefit, more frozen food in the ice box keeps the temperature steady, and your appliance won’t need to draw as much energy. Less money spent on energy is another chicken cutlet in the freezer.

Finally, consider investing in a chest freezer. You’ll be able to freeze larger, irregularly shaped items, like a rack of lamb or a whole turkey, easier in one of these. Plus the storage down at your feet rather than up high makes it a better place for heavy items. My current Brooklyn apartment doesn’t have the space, but you better believe that the first thing I’m buying when I do have more space is a chest freezer.

Carbs

Let’s start with the best thing to freeze: carbs. Breads, cake, choux puffs, cookies, English muffins—they are all freezer champions. I say this because they freeze quickly, freeze for a long time, and revive like nothing ever happened. They’re the best example of what a great time capsule the freezer can be.

Keep any bready item in the freezer. The carbs I always freeze are sliced bread, loaves of bread, pre-split English muffins (it’s less annoying later), pancakes, waffles, cooked rice, cakes, frostings, cookies (as dough or post-bake), burger buns, bagels, and biscuits. Some of these can be frozen in their raw form, but you might run into leavening problems if you try baking them after they’ve been frozen. If you haven’t tried to do it before, I recommend baking the bread, cookies, or biscuits first, cooling them completely and then freezing them on a baking tray. After they’re hard and frozen, consolidate the item into a container or freezer bag. 

Revive breads in a 350°F oven for five to 10 minutes, or in the toaster oven for pancakes and waffles. I’ve revived breads after five months of freezer time and they’ve suffered no degradation in flavor or texture. 

Meats and other proteins

Meats are easy to freeze both raw and cooked. The only thing you really have to be careful of is freezer burn. I recommend portioning your meats when you bring them home from the grocery store. You can cut chicken into slices or form ground meat into patties while it’s thawed, then wrap them securely in freezer-friendly containers or bags to freeze. I’ll sometimes reuse plastic grocery bags just to double bag them and hopefully prevent moisture loss. Other proteins I like to freeze are shrimp and tofu. 

To use frozen proteins, put the portion size of your choice into the fridge overnight. If you’re using the meat in a soup or sauce, you might be able to just toss it into the hot pot of liquid to thaw and cook more quickly. Frozen cheese is a lifesaver when you need to make a boring meal a tad more appealing. Shredded and low-moisture cheeses freeze well. Check here for a more complete guide on great freezing cheeses.

You can easily freeze a block of cheese, like low-moisture mozzarella, cheddar, or swiss, straight in its plastic packaging. When you need to thaw it, leave it in the fridge overnight and it should be ready to go the next day.

If you know that you’ll be using it for particular uses, like pizza toppings or lasagna layers, slice or shred it before freezing and keep it in freezer-safe containers. Then the container can essentially live in the freezer. You can just reach into the bag and pluck out exactly what you need, leaving the rest to stay frozen until next time.

Fruits and vegetables

Fruits, vegetables, and fruits we call vegetables are all freezable. It’s really the thawing that can cause trouble for some produce, but more on that later. When you’re preparing to freeze fruit, slice it into bite sized pieces first, if needed. For example, berries don’t need to be prepped, but pineapple does. Peel fruits and veggies that you’d normally eat peeled—probably not necessary for bell peppers, but you’d do this for bananas. They should be peeled first and then cut into smaller pieces for using later. I’ll usually peel ginger root and julienne it because that’s how I’ll normally use it in soups and curries. 

Lay the pieces out onto a parchment lined baking sheet in a single layer and put it in the freezer for an hour or two until solid. Then consolidate the fruit into a freezer-safe container. When you’re ready to use the produce, drop it straight into the cooking dish—there’s no need to thaw it. In fact, thawing the ingredient first will probably cause it to be mushy. That’s why fruits and veggies that have been frozen are often great for cooking—they transfer all of their flavor beautifully and it doesn’t matter if their cell structure has gotten a little busted up. Try using them in stews, soups, muffins, pies, or smoothies.

Milks and liquids

As I mentioned earlier, freezing liquids in flat planks can help you stack them and conserve space, as opposed to finding spaces for blocks of liquid. However, it’s really a matter of preference. I wasn’t privy to the world of freezing milks until recently when I learned that I could freeze and thaw coconut milk. It turns out you can freeze cow milk equally as well. 

This is a huge boon, since dairy milks tend to spoil rather quickly, but buying a whole gallon is usually more cost effective than the smaller sizes. Now you can buy the bigger size, pour half of it into a freezer-safe container and pop it into the freezer. Use the other half at your normal pace, and when you’re ready, thaw the other portion.

Thaw frozen milk in the fridge overnight and give it a shake to smooth it out. If you’re in a rush, you can put the icy milk block into a pot on the stove and warm it up. Then return it to the fridge in a container to use in cereal, tea, and coffee over the next five days. 

Entire cooked meals

Take it from the freezer aisle of your grocery store: a lot of completely cooked meals can be frozen. While you could meal prep for the freezer (my mom will make three lasagnas just to freeze them for us kids later), I use this as an easy way to save leftovers from the garbage can. If I make soup, a huge batch of chili, a casserole, or a stir fry and find that I have way more left over than I expected, then I’ll portion it out into containers or freezer bags and freeze it. This is especially helpful for when you’re leaving for vacation or you have dinner plans for the next four nights. 

Depending on the meal you’ve frozen, the best way to reheat it is to use the original cooking method. If it’s soup, throw the frozen blocks into a pot, cover it with a lid and heat it over low heat to revive it. If it’s a casserole, gently reheat it in the oven covered with foil so it doesn’t dry out. A stir fry or sautéed meal will reheat best in a lightly-oiled large pan. Start it off on low heat with a lid so the humidity can help thaw the food. After you can break up the pieces easily then you can keep the lid off and bump up the heat to get a nice fry going, and evaporate any excess moisture. 

Tough to freeze items

There are some items that just don’t fare well in the freezer. Whole eggs with their shells on are not recommended for freezing because their shells can crack as the interior expands; this may allow bacteria to potentially contaminate the inside. However, you can crack them and freeze them free from their shells. 

Watery fruits, vegetables, and tender herbs, like lettuce, cilantro, melons, and cucumbers freeze well but lose their structural integrity after thawing. These can be frozen, and as long as your intentions are to use them in something blended (like a soup or smoothie) then you won’t be disappointed. There’s no need to thaw them, just dump them straight in the soup, sauce, or blender.
